NV Veuve Clicquot chilled to service temperature, opened and poured into flutes:
What do you notice about the picture? How did this happen? How do you prevent this from happening?

The left flute was prepared earlier in the day or the night before. The right flute was washed and rinsed with hot water. Hot water rinsing does not properly remove soap film. Furthermore, the flute was dried, polished and buffed just before service. Polishing and buffing increases the static electricity in the glass, thus reducing the number of bubbles and restricting the movement of the bubbles.
The recommendation is to prepare your sparkling wine glasses four hours before use.
